Morning oatmeal boil over - how to prevent!

image from quakeroats.com

Have you tried cooking your regular (not instant) oatmeal in the microwave and it boils over everywhere?
What a mess it makes!  Not something to deal with early in the morning.

1.  Place regular oatmeal in bowl, desired amount, but no more than half the bowl can hold.
2.  Add water to cover, also not more than half the bowl can accommodate, and  add dash of salt, stir.
3.  Cover microwave safe bowl with plastic wrap.
4.  Heat on 60% power for about 2 minutes.

This works for me with no mess.

Before I was following the instructions on the back of the package and it was going all over everywhere.  Too much water, and too high of heat is the problem I am thinking.

How do you cook oatmeal?

French Toast Cupcakes Recipe Review

French Toast Cupcakes
from the book Confectionately Yours : Save the Cupcake by Lisa Papademetriou

The recipe:

These cupcakes are really light, fluffy and moist.  Tastes just like coffee cake. So delicious!
Spooning the sugar syrup mixture on top of the cupcakes and swirling it was pretty tricky and messy.
Plan to scour the stickiness off your countertops and floors after baking these!
